Potage Garbure
A very tasty vegetable soup with duck wings.
For 6 persons
Pre-prepared:- Yes
Preparation time 20 mins
Cooking time 1 hour 30 mins
1/2 Cabbage preferably Savoy.
2 large carrots.
1 Onions.
1 Small Turnip.
1 Small stick of celery.
2 Duck wings taken from a confit.
1 Tsp chopped fresh or dried origano.
1 Bayleaf.
175gm Haricots blanc either tinned or soaked overnight.
200gm Potato.
125gm of Bayonne Ham.Bayonne ham
1 Clove garlic.
1 Sprig thyme.
1/2 tsp Piment d'Espelette powder.Espelette pepper
Peel the turnip and cut into small cubes.
Slice the cabbage, rince in vinegar. Then blanch in boiling water for 1 minute. Drain and refresh in cold water.
Wash and peel the carrots. Cut into 3 or 4mm rounds.
Wash and peel the celery, cut into 25mm lengths.
Clean the onion and cut into rounds.
Peel and cut the potato into small cubes. Place in water to stop from going brown.
Cut the ham into small cubes. Remove all the flesh from the duck wings and put it with the ham.
Put all the ingredients into a large casserole of cold water. Bring to the boil and then simmer for 1 1/2 hours. Check and adjust the seasoning and if necessary add a little more garlic.
Allow to cool and then refrigerate. This allows you to remove any grease from the surface of the soup.
Re heat and serve.
